Aubergine with red béchamel sauce cooked in the oven.

Ingredients:

  • 250 grams ground meet (beef or pork)

  • 2 small onions.

  • 2 cloves of garlic.

  • 3 big aubergines.

  • Salt & pepper.

  • Butter+flour+milk for the béchamel sauce.

  • 2 tablespoons tomato paste.

  • Gouda cheese (optional)


Here´s how to do it:

- Cut the aubergines into circles and salt them.

- Fry them in hot oil and let cool.

- Chop the onions and garlic and fry them in butter, then add the ground meat and season with salt & pepper.

- Prepare the béchamel sauce and add the tomato paste to give it a red color.

- Arrange the fried aubergines in the bottom of the pan as a first layer.

- As the second layer, add the meat mixture.

- Cover it with the rest of the aubergines.

- Finally top with the béchamel sauce and sprinkle some shredded cheese.

- Bake at (180°C) for 30 minutes.
