This is absolutely the best banana cake you will ever taste! It’s amazingly soft.
Baked with yoghurt, which is why it is super moist. You will love the taste of the big chunks of banana, walnuts and the nice flavor of cinnamon .


Ingredients
3 large ripe bananas (about 1 and 1/2 cups cut into small pieces)
3 cups flour
2 teaspoons baking powder
½ teaspoon ground cinnamon
3/4 cup unsalted butter, softened to room temperature
1 cup sugar
1/2 cup brown sugar
3 large eggs, at room temperature
1 teaspoon vanilla
1 cup milk, at room temperature
½ cup yoghurt
½ cup crushed walnuts
An apple (optional)
Here's how to do it:
Preheat the oven to 180°C and prepare your pan by greasing it or use baking paper.
Cut the bananas and set them aside.
Whisk the flour, baking powder and cinnamon together.
Using a mixer, beat the butter on high speed until smooth and creamy (about 1 minute).
Add the sugar and beat on high speed for 2 minutes until creamed together.
Add the eggs and the vanilla. Beat on medium-high speed until combined.
Add the bananas and the walnuts.
With the mixer on LOW speed, add the milk, yoghurt then slowly add the dry ingredients just until incorporated.
Do not mix on high speed not to crush the bananas. The batter will be slightly thick and a few lumps is OK.
Spread the batter into the prepared pan.
Slice the apple and place it on top.
Bake for 45-50 minutes in the middle of the oven. Baking times may vary, so always keep an eye.
The cake is usually done when you insert a toothpick or a knife in the center and it comes out clean. If you find the top of the cake is browning too quickly in the oven, loosely cover it with aluminum foil.
Sprinkle with powdered sugar
