Classic Cheese Pie

The classic Swedish Västerbotten cheese pie is very easy to make and delicious to eat.

Vasterbotten cheese (Västerbotten) is a Swedish cow's milk cheese with a semi-sharp flavor. In Sweden the cheese is served at late summer crayfish parties.  It is also used in a well-known pie which I will share with you the recipe. 


If you don't have Vasterbotten cheese you can substitute equal amounts of:

  • Gruyere cheese

  • or Comte, from the French Comte region of France. It is more mild than the Swiss Gruyere.

  • or Sharp cheddar cheese




Here are the ingredients for the pie crust:

1 cup butter

1 1/4 cup flour 1/4 cup water


Filling ingredients:

1 ½ cup Västerbotten or Gruyere cheese

3 eggs

3/4 cup cream

Salt & pepper for seasoning


Here is how to make it:

Set the oven to 200 C.

Mix the flour with the butter then gradually add the water.

Place the dough in a medium sized pie pan and make holes with a fork.

Bake it in the oven for only 10 minutes.

Prepare the cheese mixture by simply adding the eggs , cream and the grated cheese altogether.

Season with salt & pepper.

Pour the mixture in the cooked pie crust.

Bake for 20 minutes or until golden brown.
