Delicious Spinach pie recipe

There are many spinach pie recipes, single crust or double crust, some people even do it with "Phyllo Pastry" but this recipe is different, I have learned it from my mum.

I hope you like it!


Blind baking a pie crust means filling the bottom crust with weights to keep the pastry from puffing up in the oven. You can use dried beans or uncooked rice, both will work just as well.



Ingredients:

  • 1 pack of puff pastry dough

  • 1 tablespoon of butter

  • 1 large onion, finely chopped

  • 2 cloves of garlic

  • 1 cup frozen chopped spinach, squeezed dry

  • ½ cup grated cheddar cheese

  • ½ cup feta cheese

  • 1 cup grated Gouda cheese cheese

  • 2 large eggs

  • 3 tablespoons finely chopped mint

  • 3 tablespoons finely chopped parsley

  • ½ cup of milk

  • Salt & pepper to taste

  • ½ teaspoon cumin

Here's how to make it:

  • Preheat the oven and spread the dough in a buttered pan and bake at 180C for 15 minutes.

  • After baking the crust, set it aside to cool.

  • Heat the butter in a pan and start sauteing the onions and garlic until tender.

  • Add the spinach, parsley and mint and cook for 5 to 10 minutes until the spinach is heated through.

  • If using frozen spinach, you will want to cook until excess moisture evaporates.

  • Set the spinach mixture aside to cool.

  • In a large mixing bowl, combine the milk, eggs and the cheese.

  • Add the cooled spinach mixture and mix until combined.

  • Season with salt,pepper & cumin.

  • Add the spinach mixture to the pie crust and bake for 25 minutes, until golden color.
