It is not possible to talk about tomatoes and Greek food without mentioning “Yemista”. "Gemista" pronounced "yemista" translates as “ones that are filled”.

These are vegetables usually tomatoes, bell peppers, zucchini and eggplant filled with rice (sometimes with ground meat) and baked in the oven.

If you’ve ever been to Greece, I’m sure the Greeks did not let you leave without trying yemista or dolmades first. They are hospitable like that!

Ingredients:

- 250 grams minced meat ( beef-lamb-pork) I personally prefer mix of beef & pork.

- 1 big onion.

- 2 cloves of garlic.

- 1 cup rice.

- Herbs, parsley and garlic leaves.

(You can also add mint leaves, coriander and dill if you want)

- Salt,pepper,7 spices and cinnamon.

- Cook at (180C) for 45 minutes.

* You have to double the ingredients if you're having guests:)

Anush ella!
