"Itch" – Armenian bulgur Salad /Armenian Tabbouleh

Itch, is very similar to "tabbouleh", but with much less parsley. It's such an easy, delicious fresh grain salad, filling enough for lunch or perfect as a side dish with dinner.

It can be eaten warm or cold.

This Armenian bulgur salad is something I really love. If you love tabbouleh, you may love this even more. Try it and share with me your opinion in the comments below.




Ingredients

  • 1 cup of fine bulgur

  • 1 large onion, finely chopped

  • 4 cloves of garlic

  • 4 tomatoes diced

  • 1 small green bell pepper diced

  • 1 tablespoon of hot red pepper or red paprika paste

  • A pinch of each : 7 spices, cumin, black pepper and salt to taste

  • 1 handful of chopped parsley

  • A small handful of mint leaves, finely chopped

  • 5 tablespoons of olive oil for drizzling

  • 2 tablespoons of lemon juice

Here's how to do it:

Soak the bulgur in water for ½ an hour until it is tender.

Warm the olive oil in a frying pan over a medium high heat and fry the onions & garlic first then the green peppers.

Add the tomatoes, red pepper paste and spices. Simmer for about 10 minutes.

When the tomato mixture has cooled down, stir in the bulgur together with the lemon juice, the parsley and the mint .

Drizzle some extra olive oil and mix well.

Serve with lettuce or cabbage leaves and sprinkle chopped green onions on top.
