My KIDS favorite dish!

Easy and delicious Chicken & Cauliflower "Makloubeh" .
Makloubeh can also be spelled magloubeh, maglouba, maqluba and sometimes ma’aloubeh, which means "upside down" in Arabic and has its origins from the Middle Eastern kitchen,mainly from Jordan but there are many other versions from Syria, Lebanon,Iraq,etc.. This dish’s main ingredients are fried vegetables (eggplant-cauliflower-peas), spiced rice, and meat of your choice (could be lamb, beef or chicken).
It is presented by carefully flipping the pot over and serving it upside down with yoghurt & cucumber salad as a side dish.(Picture below)
I myself learned this recipe from my in-laws family in Jordan and my kids totally love it!



Ingredients:
-1 middle sized cauliflower.
-1/2 kgm of chicken breast cut into cubes.
-Salt & pepper to taste.
-4 cloves of garlic
-2 teaspoons turmeric powder (Curcuma)
-1 teaspoon cinnamon
-2 teaspoons Baharat (7 spices).
Note: This can be found at Middle Eastern groceries, but if not, you can make your own. The blend of 7 spices is a mix of ground spices like black pepper, paprika, cumin, coriander, cloves, nutmeg, cinnamon and cardamom.
-2 bay leaves to be added while boiling the chicken.(Don't forget to save the chicken stock)
-1 cup vegetable oil to fry the cauliflower.
-2 cups of plain rice
-2 potatoes(optional)
The way to make it:
- In a large pot (the one you used to cook the chicken), place the chicken at the bottom in a desired pattern, then add the fried cauliflower & potatoes as a second layer.
- Sprinkle the salt, spices and the garlic cloves over them, finally arrange the rice over them all.
- Slowly pour the chicken stock to the chicken-veggie pile you have just built. Make sure the liquid just covers the rice (2 cm over the rice is ideal).
- Cook the saucepan on high heat for 8 minutes then cover and simmer for 40-45 minutes.
- When the water has fully evaporated and the rice is fully cooked take the pot off the heat and leave it to cool a bit.
- Flip the pot onto a serving plate and slowly and carefully remove the pot.
*You better eat fast before you faint:)
