My home made "Borsch" or "Borscht" soup.

One of my favorite soups from Ukrainian kitchen, “Borsh” made with beetroots as one of the main ingredients, which gives the dish its distinctive red color. The interesting fact about this dish that it has more than 35 variations. It is amazing that every country in Eastern Europe and Northern Asia like Belarus, Moldova, Latvia, Lithuania, Poland, Romania, Russia & Ukraine has its own recipe and even every family have their own. Mine is the classic one which I learned from my Ukrainian friends during my stay in Kiev.
It is typically made by combining meat or bone stock with sautéed vegetables, which as well as beetroots, it includes cabbage, carrots, onions, potatoes and tomatoes chopped into small cubes. Depending on the recipe, borsch includes meat and sometimes can be purely vegetarian.
It is often served with "smetana" or sour cream on top.
