The best thing in summer is when you can go out into the garden and harvest your own fruits, berries and vegetables.

Rhubarb is native to central Asia, the Chinese call it "the great yellow" and have used the root for medicinal purposes for thousands of years.

Rhubarb pie is especially popular in the areas where the plant is grown. In addition to diced rhubarb, the pie often contains a large amount of sugar to balance the plant's acidity. In Canada and the United States, rhubarb pie with strawberries is a popular summer pie. It is also popular in Sweden and many other European countries.

Rhubarb pie is a one of those classic favorite desserts people keep making over and over again, you'll never get tired of it. It is very delicious in a different way.

This is my husband´s recipe, he loves baking & cooking as well.

Ingredients:

3 cups diced rhubarb

1 cup oats

1 cup sugar

2 cups flour

A pinch of salt

½ teaspoon baking powder

½ teaspoon vanilla powder

½ cup melted butter

2 tablespoons thick syrup

Here´s how to do it:

- Set the oven at 150C.

- Mix all dry ingredients in a bowl.

- Melt the butter in a saucepan along with cream and syrup.

- Mix all ingredients together.

- Dice the rhubarbs and place them in a buttered pan.

- Pour the dough on top of the rhubarbs.

- Bake the pie in the middle of the oven for 40-50 minutes, until it has a nice golden color.
