Here’s a simple basic cheese “Quiche” from the French cuisine. It’s very easy to make and at the same time very delicious.
Quiche is a French tart consisting of pastry crust filled with savory custard and pieces of cheese, meat, seafood or vegetables. The best-known variant is quiche Lorraine, which includes bacon. Quiche can be served hot or cold and can be eaten at breakfast, brunch, lunch or dinner.



Crust:
1 pack pf puff pastry ready made dough.
Blind baking a pie crust means filling the bottom crust with weights to keep the pastry from puffing up in the oven. You can use dried beans or uncooked rice, both will work just as well.
Spread the dough in a buttered pan and bake at 180C for 15 minutes.
Filling ingredients:
1/4 cup Cheddar cheese
1/2 cup Gouda cheese
1/4 cup Feta cheese
2 eggs
½ cup milk or cream
Chopped parsley
Mix them all well and fill the pie.
Bake at 200C until you have a nice golden color.
